There are way more than 7
Yeh waaay more than 7. There are at least 4 distinct ones that I can think of off the top of my head in SC alone. Texas has a bunch of different ones as well, every state does really. Redheaded lady seems like a linguist trying to mimic a Southerner, but not an actual Southerner.
Also, African Americans factor into the southern accent significantly. It would be great to see that represented.
